Baby Spinach Salad with Honey Balsamic Dressing
WHAT YOU NEED:
Baby Spinach Salad:
- 16 oz. Fresh baby spinach
- 4 oz. Greek Feta, crumbled
- ½ cup Mandarin oranges, canned
- 4 oz. Fresh strawberries, sliced
- ½ cup Granny Smith apples, diced
- ½ cup Sliced almonds, toasted
Honey Balsamic Dressing:
- 2 tbsp. Balsamic vinegar
- 2 tbsp. Fresh lemon juice
- ½ cup Extra Virgin Olive Oil
- 1 tbsp. Soy sauce
- 1 tbsp. Honey
- 1 Garlic clove, minced
Salt and freshly ground pepper to taste
Preparation:
Puree all dressing ingredients and set aside. (Dressing should be slightly thick.)
Place spinach in a large bowl and top with fruit, feta cheese, and toasted almonds. Drizzle dressing over the entire salad and serve immediately.
Serves 6 people.
* For a fancier salad, try replacing the sliced almonds with ½ a cup of candied pecans.
