Baby Spinach Salad with Honey Balsamic Dressing


WHAT YOU NEED:

Baby Spinach Salad:

  • 16 oz. Fresh baby spinach
  • 4 oz. Greek Feta, crumbled
  • ½ cup Mandarin oranges, canned
  • 4 oz. Fresh strawberries, sliced
  • ½ cup Granny Smith apples, diced
  • ½ cup Sliced almonds, toasted
Honey Balsamic Dressing:
  • 2 tbsp. Balsamic vinegar
  • 2 tbsp. Fresh lemon juice
  • ½ cup Extra Virgin Olive Oil
  • 1 tbsp. Soy sauce
  • 1 tbsp. Honey
  • 1 Garlic clove, minced
Salt and freshly ground pepper to taste

Preparation:
Puree all dressing ingredients and set aside. (Dressing should be slightly thick.)

Place spinach in a large bowl and top with fruit, feta cheese, and toasted almonds. Drizzle dressing over the entire salad and serve immediately.

Serves 6 people.

* For a fancier salad, try replacing the sliced almonds with ½ a cup of candied pecans.
